Scottish Shortbread

Scottish Shortbread
Preparation method
Step One
Cream sugar and butter together.
Step Two
Sieve the four and cornflour together and add gradually to the mixture.

Step Three
Use your hand to work the flour in. The mixture will be very stiff. Do not add liquid.
Step four
Flatten into a shallow baking tin and prick all over with a fork.

Step five
Bake in a pre heated oven at 180ºC for 30-40 mins till golden brown.

Step six
Remove from oven, sprinkle with castor sugar, cut into fingers.

Step seven
Leave to cool for about 5 mins, then remove from tin onto cooling rack.

Serving Steps

Step One
Serve with tea or coffee. Store in airtight tin.
